Answer: After I bake the cake per recipe cooking instructions for time & temperature I set hot pan on a rack so it has airflow all around the pan to cool. Never had a cake turn out overdone because the pan is hot. Made Hershey's Perfectly Chocolate Cake in Feb. Yum it's so good.
